The Major Fatty Acids and End-products of Clinical Significance

Research News: The fatty acids of major importance and the ones discussed here are all polyunsaturated fatty acids, meaning that they have several carbon-to-carbon double bonds (i.e., C=C), which are vulnerable to oxidation, rancidification, and/or hydrogenation. Therefore, these fatty acids must be protected from oxygen, heat, light, and prolonged storage. Once structurally altered by oxygen, heat, or light, these fatty acids lose some or all of their biologic value, and they take on disease-promoting properties by interfering with fatty acid metabolism, altering cell membrane dynamics, and/or by having direct/indirect inflammatory and carcinogenic actions.
