Kale-Beet-Raspberry Salad

This easy salad is delicious and loaded with phytonutrients.  The raw kale adds fiber and the benefits of cruciferous vegetables; the beets and raspberries add more fiber and another big dose of antioxidants.  Serve with a small amount of vinegar and organic olive oil.

Ingredients and Preparation and Serving:

  • Chop a bunch of washed kale
  • Cut raw beets into small pieces as shown
  • Empty about 1-2 cups of raspberries
  • Toss with a small amount of olive oil, perhaps with a touch of vinegar
  • Eat it, love it
