Raw Fruit-Nut Cake

Ingredients:

  1. 1 cup dates
  2. 1 cup raisins (either golden or brown)
  3. 1 cup walnuts
  4. 1 cup almonds
  5. 1 cup shredded coconut (unsweetened)
  6. 1 cup wheat bran (optional)
  7. Honey
  8. 1 tsp. cinnamon

Preparation:

  1. Using a food processor grind all ingredients together, work in batches until there is a finely ground mix that is slightly sticky.
  2. Place in a container of your choice and press into a loaf.  I use an angel food cake pan for smaller slices.

Serving Recommendations:

  • Let the cake rest so flavors marry and the loaf is set.
  • Invert cake onto serving platter, cut and enjoy!
  • Top with plain Greek yogurt and sprinkle with cinnamon
