Fresh Figs with Feta & Raspberry Balsamic Drizzle

Ingredients - Figs:

  1. 2 cups fresh figs, sliced
  2. Arugula or Spinach
  3. 1/4 cup feta cheese, crumbled
  4. 1/4 cup chopped walnuts

Ingredients – Raspberry Balsamic Drizzle:

  1. 1/2 cup raspberries
  2. 1/2 cup balsamic vinegar
  3. 1 T. cane sugar (or some honey)

Preparation:

1.  Add balsamic vinegar to pan and bring to high heat, add sugar,      stir.  Add raspberries and simmer until desired consistency.

2.  Remove stems and cut figs cross-wise and lay over bed of spinach/  arugula.  Top with walnuts, crumbled feta and drizzle with raspberry balsamic reduction.  Top with fresh raspberries as desired.

  • Figs, Arugula, Spinach, Walnuts: these are loaded with fiber and antioxidants and phytonutrients
  • Feta: tastes great!!
