Cabbage, Sliced Almond, Sesame Seed Salad
Recipe

Ingredients:
- 1/2 to 1/3 of an organic green cabbage
- About 1/2 cup sliced almonds
- about 1/4 cup sesame seeds, raw or
toasted
- 1-2 tablespoons of rice vinegar
- 1 tablespoon of olive oil
Preparation:
- Chop the cabbage into small square-shaped
pieces
- Put it all in a bowl and mix together;
the way I do it is to put it into a pot with a lid, close the lid, and
then shake it all together until well mixed
Serving Recommendations:
- Eat it raw; it goes really well with fish
as in the dish pictured below
- It should taste a bit sweet--this is why
we use the rice vinegar
Health Benefits of This Meal:
- Fiber
- The most important component of cabbage
is the "I3C" which gets converted to "DIM" in the stomach. Both
I3C and DIM have powerful anticancer benefits, either by directly
promoting the death of cancer cells or by downregulating estrogen
receptors to prevent the cancer-promoting effects of estrogens,
especially estradiol. Further, I3C and DIM also improve estrogen
metabolism so that healthier "anti-cancer estrogens" are produced rather
than "cancer-promoting estrogens."
